1 Panzanella 500g stale country bread 3-4 ripe tomatoes Small bunch of fresh basil, Lettuce 1 red onion, thinly sliced 1 cucumber Wine vinegar Salt Extra virgin olive oil Tear the bread into chunks, put them into a salad bowl and moisten with cold water for a few minutes. Press the bread with your hands and squeeze out all the water. Put the onion slices in a bowl of cold water and leave to soak for an hour. Cut the tomatoes into dice, place in a colander and leave to drain. Put the bread in a bowl and add the onion, the tomatoes, the cucumber slices and a little bit of lettuce Roughly tear the basil leaves and sprinkle on top. Stir together, add some salt, then stir in vinegar and abundant extra virgin olive oil. Allow to sit for an hour in the fridge, then serve.

2 Chocolate salami 200 g Rich tea biscuits 100 g Caster sugar 150 g Butter (unsalted) 2 Eggs yalk 2 spoons of plain cocoa 40 ml Rum (or Marsala or Curaçao) Put the biscuits into a bowl and reduce them into large crumbs. Cut the butter into pieces and let it warm to room temperature. When the butter is soft, work it with a whisk for few seconds and then add the ingredients without stopping to whisk: add the sugar, the eggs, the plain cocoa, the rum. Pour the mixture into the bowl with the biscuit crumbs and work it until all the biscuit crumbs are completely covered. Gave the chocolate dough the shape of a salami and make it compact. Wrap it with cling film. Put the chocolate salami in the fridge for a couple of hours. Slice your chocolate salami and serve it.

3 Panzanella 1/2 kg pain de campagne rassis 3 ou 4 tomates basilic frais, laitue 1 oignon rouge 1 concombre huile dolive vinaigre sel La Panzanella est un plat typique de la cuisine paysanne toscane qui récupère le pain rassis. Coupez le pain en tranches épaisses, trempez-le pour un quart dheure dans de leau froide, pressez et reduisez-le en miettes. Après lavoir mis dans un saladier, ajoutez loignon coupé en tranches fines, les tomates en petits morceaux, le concombre en rondelle, un peu de laitue, et beaucoup de basilic. Mélangez avec une bonne quantité dhuile, un peu de vinaigre et le sel. Servez-la froide quelques heures après lavoir préparée.

4 Saucisson doux 200 gr. de biscuits secs (comme Petit Lu) 100 gr. de sucre 150 gr. de beurre 2 jaunes doeufs 2 cuillers de cacao amer un petit verre de liqueur doux (Marsala, Curaçao) Mélangez les jaunes doeufs avec le sucre pour obtenir une mousse, ajoutez de beuure fondu à bain-marie mais pas chaud, le cacao, le liqueur, et les biscuits émiettés. Quand vous aurez obtenu une pâte plutôt ferme, donnez-lui la forme dun saucisson et enveloppez-le dans une feuille daluminium; mettez votre saucisson dans le frigidaire.
